Comments

If weight is not working for you, it is because it is a property of "widget", not of "instance".

To use the "default_value" field:

<?php
...
"#default_value" => array(array('value' => '...')),
...
?>

How can i use a function to provide values for a field created on user profiles? Can't find any good examples.

The values of $instance['display']['default']['label'] can be: 'above', 'inline', 'hidden'.
I had to check the code of field.module to find this out.
